Description Dashi Concentrate
Dashi is the essence of Japanese cuisine. Functionally, it is comparable to European broths and stocks, serving as a base for soups and sauces. In the preparation of Japanese Dashi, as much umami as possible is concentrated. Therefore, it traditionally consists of an extract of kombu seaweed, bonito flakes, and/or shiitake mushrooms. These three ingredients have the highest umami content.
The Dashi concentrate is an instant product for the quick and easy preparation of a Dashi or - according to the manufacturer's suggestion - as a topping seasoning for fried dishes.
About the manufacturer
The origins of the company date back to the year 1890. Initially, they produced misos and soy sauces. In 1964, the company Shimaya invented this concentrate as an alternative and convenience for the elaborate preparation of dashi in private households. Meanwhile, Shimaya's dashi concentrate has become one of the best-selling dashi products worldwide.
