Recipe for Eggplant Parmigiana
This classic Italian dish combines tender, golden-brown fried eggplant slices with an aromatic tomato sauce, which gets a particularly intense and fruity flavor from the high-quality Mutti strained tomatoes. The combination of spicy herbs, melted cheese, and the velvety sauce makes the Eggplant Parmigiana a true delight, convincing both as a main course and as a side dish.
Ingredients (for about 4 people):
- 2 medium-sized eggplants
- Salt
- Olive oil for frying
- 400 ml Mutti strained tomatoes
- 1 medium-sized onion, finely chopped
- 2 cloves of garlic, finely chopped
- 1 bunch of fresh basil (about 20 leaves)
- 150 g mozzarella (vegan cheese alternative also welcome, if desired)
- 50 g grated Parmesan cheese (optional or replace with a vegan alternative)
- Freshly ground black pepper
- Optional: 1 tsp sugar (to round off the acidity)

Preparation:

Prepare eggplants:
Cut the eggplants into slices about 1 cm thick. Lightly sprinkle them with salt and let them rest for 30 minutes to allow excess moisture to escape. Then pat the slices dry with kitchen paper. -
Fry eggplants:
Heat plenty of olive oil in a pan and fry the eggplant slices until golden brown on both sides. Then place them on paper towels to remove excess oil. -
Prepare tomato sauce:
Heat some olive oil in a pot and sauté the chopped onion until translucent. Add the garlic and briefly fry it until it smells aromatic. Then add the Mutti strained tomatoes to the pot. Stir in the fresh basil leaves (roughly torn) and season the sauce with salt, pepper, and optionally sugar. Let the sauce simmer on low heat for 15–20 minutes so that the flavors blend well. -
Layering of the Parmigiana:
Preheat the oven to 180 °C (top/bottom heat). Lightly grease a baking dish. Start with a thin layer of tomato sauce on the bottom of the dish. Then place a layer of fried eggplant slices on top. Spread some sauce over the eggplants and sprinkle a few pieces of mozzarella as well as some grated Parmesan cheese over it. Repeat this layering process until all the ingredients are used up. The top layer should consist of tomato sauce and a generous portion of cheese. -
Bake:
Bake the eggplant Parmigiana in the preheated oven for about 30–35 minutes, until the cheese is melted and lightly golden brown and the sauce is bubbling. -
Serve:
