Make a dashi with bonito flakes and kombu in the traditional way
One of the basic types of Dashi is the combination of bonito or katsuobushi flakes and kombu. For this, both ingredients are "extracted" in water. You start with the kombu, which is left to steep in lukewarm water in a pot for a certain amount of time. Then the bonito flakes are added and the whole is briefly brought to a boil. After that, everything is passed through a sieve and the dashi is ready.
As an alternative to the pot, the original Japanese Hario Dashi Pot can also be used to make the dashi in the microwave.
The result is a finished broth with a yellow-golden hue and full of umami.

What does this Dashi taste like?
The taste of the watery Kombu extract in the first step is not unlike a European broth. What you will perceive is the umami of glutamic acid, which has dissolved from the seaweed into the water. You will also taste a hint of salt. However, compared to European broth, the fatty component is missing. The longer the Kombu stays in the water, the more intense the Dashi becomes. The Bonito flakes then add a second umami component, namely the amino acid inosinate, and light smoky notes. Through the combination of the two amino acids from Kombu and Bonito flakes, the umami is enhanced.

How to use Dashi?
Dashi can be used as a base for soups like miso soup, ramen soup or also as an ingredient for sauces. You can also add dashi to European dishes, which adds umami without making the dish taste Japanese.
